Sausage Skewers

1 Package of sweet Italian sausage
2 can of pineapple chunks
1 cup of your favorite barbecue sauce
Bamboo shishkabob skewers soaked for at least an hour in water or metal skewers which were kept at room temperature

Cut slices across sausages diagonally and insert pineapple chunks.
Insert bamboo skewers through the length of the sausage, piercing the sausage and pineapple chunks.
Brush BBQ sauce on skewers.
Grill for 30 minutes.
Serve over rice.

I also like to do this with apricot chunks.

You can even use slices of peppers/onions then remove the skewer and serve on a roll with melted mozzarella cheese.
